With summer in full swing and lots of opportunities to make delicious meals on the grill, why not opt for some kebabs?
Seekh Kebabs are minced meat skewers made with loads of cilantro, ginger, garlic, and mint. They are usually made with lamb meat, but if preferred, you can use ground beef or ground chicken. The mixture of the meat with the smoky spices give these kebabs the best flavor. They are perfectly spiced and absolutely satisfying in every way!

SEEKH KEBABS (Minced Lamb/Chicken/Beef Skewers)
Servings: 8 to 10 kebabs depending on skewer size
Ingredients:
- 2.5 to 3 lbs. of ground meat (lamb/chicken/beef)
- 1 large onion (diced small)
- 2 Tbsp. garlic paste or 6 garlic cloves (crushed/minced)
- 2 tsp. ground coriander
- 2 tsp. ground cumin
- 1 tsp. turmeric powder
- 1 tsp. garam masala powder
- 1.5 Tbsp. madras curry powder (hot or mild)
- 2 tsp. salt
- ¼ cup of freshly chopped cilantro
- ¼ cup of freshly chopped mint
- 1 green chili (grated)
- 3 Tbsp. of Seekh Kebab Masala Powder (Shan Brand or any brand)
- ¼ cup of melted butter or ghee
- Wood or metal skewers (8-10) *soak wood skewers in water till ready to use
Instructions:
- In a large mixing bowl, add meat.
- Add onion, garlic, coriander, cumin, turmeric, garam masala, salt, curry powder, salt, cilantro, mint, green chili, Kebab masala powder, butter/ghee.
- Mix well with fork or by hand till all ingredients are fully incorporated into the ground meat.
- For Oven Cooking:
- Preheat oven to 400F.
- Line baking sheet with foil.
- Take skewers and wrap meat around each skewer all the way to the top, even rounding the tip at the top. (Like an ice-pop).
- Lay the meat kebab on lined baking sheet and repeat with remainder of meat till all are completed.
- Cook for about 15-20min. on middle rack (rotating once onto other side after 10 minutes) and bake till fully cooked and the kebabs look a bit darker brown in color and crisped around the edges.
- Remove from heat and let cool for 2-3 minutes before pulling off the skewer.
- Serve hot with lemon wedges.
- For Grilling:
- Take skewers and wrap meat around each skewer all the way to the top, even rounding the tip at the top. (Like an ice-pop).
- Lay on a diagonal on the grill so as it cooks, you will get darker colored char marks on the kebab.
- Cook for about 15-17 minutes, rotating occasionally to get char marks on both sides and allow for even cooking. (If kebab is not fully cooked, allow to grill for extra 5 minutes. *20 minutes total.)
- Remove from heat once cooked and let cool for 2-3 minutes before pulling off the skewer.
- Serve hot with lemon wedges.
- Transfer to serving dish.
- Serve hot with rice or hot buttered Indian bread or chutneys.
